Three years ago, the founders of the iconic Little Creatures brewery sold their successful business for some hundreds of millions of dollars. Since then, they decided to redirect their attention to boutique spirits, converting a building in the centre of West Perth into a distillery.
Named after the part of the brain responsible for connecting emotions and senses, the Hippocampus Metropolitan Distillery released their first batch of biodynamic wheat vodka in February,using primarily locally sourced ingredients. The final product follows eight months of recipe trialling, and with such a smooth resulting flavour, you’ll see that time time paid off.
Although marketed as a metropolitan distillery and situated close to the city, the distillery is not yet open to the public. For now, you’ll have to try your local bottle shop for the $80 bottle of craft vodka, but there are plans to hold tours of the premises in the near future.
